Stir Fried Chicken & Bok Choy

If you’ve been a follower of all the wonder on my website, then you know that when it comes to food, I cannot really stand having to cook for too long. My favourite recipes are those which take hardly any time to prepare, whether it’s cooking or baking.

So this one’s a great recipe for those of you who are looking for a healthy and nutritious supper.

This is a recipe for one portion. It takes less than 15 minutes to have on your plate, and that’s what makes it such a go-to meal option.

You will need:

1 Chicken Breast (boiled) – You can also used minced chicken or smoked chicken if you wish

1 big bunch of Bok Choy (It’s pretty much the same as Pak Choy!)

Chilli Flakes

Herbs of your choice

Garlic

Salt, to taste

Peanuts (optional)

Method:

1. Add a few drops of olive oil to a heated non-stick pan. Throw in a few cloves of garlic and add the bok choy. Toss this around till the bok choy seems semi-cooked. Add some salt and then add strips of the boiled chicken breast to the pan.

2. Add some chilli flakes and herbs of your choice to this. I love some fresh coriander and cilantro in mine. Toss it around for a minute or two more. Turn it out onto a plate and add some roasted peanuts if you wish!

That’s all!

Told you it’s just too simple.

Cooking tip: Cook the bok choy as per the way you’d like it. I don’t cook it for more than 5-7 minutes because I like it to be a little crunchy. Also, in case you’d like a heavier meal, add a bowl of sticky rice to this. It makes for a great Asian classic meal.
