Breakfast Baby: Apple & Peanut Butter Cookies
I know I’ve been missing for a while, but I’ve been battling with college and ill health which kind of gave me plenty of time to think of newer recipes for you all.
Breakfast is one of my most favourite meals of the day. This is, of course, if I only get time to make some. But this one’s another one of my simple recipes to kickstart your day with energy – Apple & Peanut Butter Cookies!
Apples are a great fruit to start your day off with. They work better than coffee at waking you up and are full of fibre to fill in your tummy. Peanut butter, on the other hand, is another great source of protein (make sure to find one without trans fats). The two together act as my favourite power-snack that I usually eat before hitting the gym or getting outdoors. And that is why it makes for the perfect morning food. It takes not more than 5 minutes to make and you can easily pack on all the good things from this little combination. Have a look!
You will need:
1-2 apples (I have one because it fills me up well. You can add more in case you’re feeding more people)
Half a bowl of peanut butter (plain or crunchy – your pick!)
Half a bowl of mixed raisins & nuts
Chocolate chips (optional)
1. Slice the apples round and thin but thick enough to hold the other ingredients in place.
2. Smother on some peanut butter on all.
3. Add your favourite dried/fresh raisins and chopped walnuts, almonds, pistachios, etc. You could even sprinkle some chocolate chips.
It sounds simple and is absolutely delicious, not to forget adequately filling.
